Yellow Kashk

The land of Sistan in southern Iran had always had a reputation for its people’s bravery. Placed in a border land, Baluch people had always been skillful in cooking foods which get quickly ready to be useable during war. On the other hand, due to the same strategic situation, people used to prepare and store foodstuffs in advance. These foods had to be not only nourishing and ready-made, but also, they needed to be quite independent from the outside sources and urban shopping centers. In other words, people here are extremely skilled and professional in making food out of natural sources produced at home.

 Prepared in summers but considered to be the popular cuisine of winters, Yellow Kashk is one of the famous foods in this regard. Summer is when Zabol people are freed from agriculture and therefore, they have enough time for preparing the ingredients of Yellow Kashk. In addition, wind blow in the province of Sistan and Baluchestan makes the conditions suitable for materials to become dry. 

The original material of Zaboli Yellow Kashk is a dried powder composed of Bulgur, garlic, dill seeds, coriander seeds, turmeric, Doogh and also salt which are made through a time-consuming process. The materials need to keep in a closed container for several weeks to be fermented. In the next step, the materials are brought out of the container to expose to the sunlight and wind blow spread on a fabric. The final step involves massaging the dried material which are now in form of small balls in order to get powder and then sifts them. This tough process is carried out once a year providing the powder of Yellow Kashk for the whole year. However, it is interesting to know that the powder is used for making a wide range of foods especially for breakfast. Combined with water, it is like a thick soup which can become a stew by adding meat. In order to make food, the powder is fried inside the clarified butter and then mixed with water. Fried onion, walnut and meat are among the most common things they add to the Yellow Kashk to make it more delicious. Since it contains wheat, the cuisine is extremely nutritious and strengthening and it is also helpful with healing some diseases because of its local vegetables.
